Instant Chicken Taquitos [Baked not Fried!]

These taquitos are stuffed with a delicious grated chicken recipe made in your instant casserole or pressure cooker and baked to crispy perfection. Topped with salsa, avocado and cheese, these instant chicken taquitos will be an instant family recipe!

I recently celebrated my blogging 8th anniversary! While I technically bought the domain and started working on the blog in November 2012, it took a few months before I had the courage to post on my first post. I was pretty committed to celebrating my anniversary blog, but over the years I’ve let it go on several occasions. I can’t say that 8 years seems more meaningful to me than 7 or 6 or 5, I can’t help but recognize how far this space and I have come.

I’m not the same person who published their first post on February 24, 2013 – which is a good thing! – but this space has also become infinitely better in many ways. Part of this has to do with the changing blogging landscape, but I am also committed to making THM as useful and resourceful as possible. I would spend hours writing blog posts and sharing fun trivia about my life, but these days I spend a lot more time testing recipes, perfecting recipes, and taking step-by-step photos too. often as possible. My goal is to make your life a little easier and I am proud that each year this blog improves a little more in this area. I have no doubt that these Instant Pot Taquitos will do the trick! Ingredients for Taquitos Instant Pot

  • Boneless Skinless Chicken Breasts
  • Yellow onion
  • Hot sauce
  • Garlic
  • Spices – paprika, cumin, salt
  • Lime juice
  • Corn tortillas
  • Grated cheese – we love monterey jack but you can use whatever you prefer
  • salsa – bought in store or to try homemade (can also replace with my pico de gallo recipe)
  • Lawyer (or guacamole)
  • Optional garnishes – chopped cilantro, grated lettuce, sour cream etc …

Of course, you’ll also need an Instant Pot (or other pressure cooker). I use the Classic 7 in 1 Instant Pot Duo and I absolutely adore it. Mine is the 8 qt version but you can make these Instant Chicken Taquitos in any version.

What is the difference between Taquitos and Flautas?

Taquitos – a traditional Mexican dish of rolled up corn tortillas stuffed with a meat filling like chicken or beef and usually fried to crisp the corn tortillas For this Instant Pot Chicken Taquitos recipe, I cook the taquitos rather than frying them to keep them a bit healthier.

Flautas– flautas are basically the same as taquitos but instead of using a corn tortilla you use a flour tortilla. You can absolutely make this recipe with flour instead of corn tortillas, but you’ll just want to cut the cooking time by a few minutes as wheat tends to cook faster than corn.

How to do instant taquitos

STEP 1: In the Instant Pot, combine all the chicken ingredients except the lime. Close the top, seal the vent and cook under pressure at high power for 10 minutes.

2ND STEP: Quick release vent when the chicken is done, remove the top and use two forks to shred the chicken. Add lime juice and stir to combine.

STEP 3: Preheat the oven to 425 degrees F. Grease a baking sheet with spray or olive oil. Place the corn tortillas on a plate and place a sheet of paper towel between every two tortillas (6 sheets of paper towel in total). Cook in the microwave for 30 to 60 seconds. * See comments below if you don’t have a microwave. Place about 1/4 cup of the chicken mixture in the center of each tortilla. Sprinkle with about 2 tablespoons of cheese.

STEP 4: Roll up the taquitos and place the seal side down on a baking sheet. Spray or drizzle with olive oil. Bake for 15 minutes or until golden brown and slightly crispy. At the last minute, remove from oven and sprinkle with remaining cheese. Return to oven until cheese is completely melted – about 1 minute.

STEP 5: Top taquitos with salsa, avocado (or guac) and optional garnishes for serving.

Answers to your questions:

Can I use frozen chicken breasts?

Yes! Absolutely. You will just want cook your frozen chicken breasts in your Instant Pot for 15 minutes instead of 10 minutes.

Can I fry the taquitos instead of baking them?

Yes. While I personally prefer to bake them (it’s a lot less messy and a bit healthier), you can fry your chicken taquitos instead of baking them. You will want to add 1/4 to 1/2 cup of a more neutral oil to a large pot or deep frying pan. Bring to medium heat and add a few taquitos at a time. They should sizzle when you place them in the pan. Cook for a few minutes on each side until they are completely crispy.

Can I make these taquitos in a slow cooker?

Absolutely. Simply add all of your chicken ingredients to your slow cooker and cook on high power for about 3 hours. You will want to turn your chicken about halfway through cooking (1.5 hours). Once the cooking is done, you shred your chicken with two forks and proceed to the rest of the recipe.

Can I soften my tortillas without microwave?

If you don’t have a microwave, you can always soften your corn tortillas to make them flexible for those chicken taquitos. You can heat each tortilla individually in a pan for 15 seconds on each side. Then add your tortilla in an airtight container and close it with the lid. Repeat, stacking each tortilla on top of each other and sealing with the lid after each. Let “sweat” in a container for a few minutes. Then your corn tortillas should be ready to stuff and bake!

Can I make these Taquitos Chicken Meals?

Yes. These keep in the fridge for up to 3 days and you can simply reheat them in the microwave or fry them in a pan. If I’m being honest, it’s best to serve them chilled, but you can also just make Instant Pot Chicken meals and finish the rest of the recipe on the day you decide to cook them.

  3. When you’re done, remove the top and use two forks to shred the chicken.
  4. Add lime juice and stir to combine.

For the taquitos:
