Classic Vanilla Chia Pudding [4 Ingredients!]

Simple Vanilla Chia Pudding made with fresh vanilla pods (or vanilla extract) and topped with your toppings of choice! This basic recipe makes the perfect customizable breakfast or snack recipe and only takes a few minutes to assemble!

Between chia pudding and overnight oats, I feel like I always have a quick and easy option for breakfasts, snacks, and desserts! I’ve shared a few flavor variations for chia pudding over the years, but wanted to share this basic recipe!

It’s sweet, simple, and can be personalized with virtually any flavor mix or topping. You just need four simple ingredients to whip up this basic recipe which is delicious as it is, but you can go crazy with any toppings you want.

Ingredients for the vanilla and chia pudding

  • Non-dairy milk – I prefer almond or coconut milk.
  • Chia seeds
  • Vanilla pod – you scrape the seeds from inside the vanilla bean!
  • Maple syrup – I like to add this if I use unsweetened non-dairy milk but add to my preference

How to scrape a vanilla bean

This recipe calls for a full vanilla bean! You can find vanilla pods in the spice aisle of the grocery store or in the bulk spice section. These are basically dried pods of tiny vanilla bean seeds. For this recipe, you will scrape the seeds from the inside of the vanilla bean to add them to the chia pudding.

Start by cutting your vanilla bean in half with a paring knife. Gently and carefully slide the tip of the knife inside the bean to scrape off the seeds.

No vanilla bean? No problem!

If you don’t have vanilla pods on hand or can’t find them in your local grocery store, don’t worry! You can replace the vanilla extract with the vanilla bean. Use 1-2 teaspoons of vanilla extract in place of 1 4 inch vanilla bean in this recipe.

How to make chia pudding

STEP 1: Combine all the ingredients in a large bowl and mix well.

2ND STEP: Cover the bowl or place it in an airtight container or mason jar and refrigerate overnight or for at least 8 hours. Garnish with your choice of toppings (see below) and serve!

Chia pudding filling ideas

Like I said, this recipe is delicious as is. If you want to add some extra flavors and textures, here are some ideas!

  • Fresh fruit – I love berries, bananas, kiwis, mangoes, etc.
  • Dried fruit – you want to add a fluffy texture? Add dried fruits!
  • Nut butter – delicious mixed or drizzled on top.
  • Cocoa powder – add a little cocoa powder for a chocolate kick!
  • Nuts or seeds – add crunchy and healthy fats with nuts and seeds.
  • Grated coconut – add a light coconut flavor by incorporating coconut flakes or grated coconut.

How to store chia pudding

Store your chia pudding in an airtight container in the refrigerator for up to five days. If the chia seeds have absorbed too much liquid for your taste, you can add a little milk before serving.
