Chicken Teriyaki 20 minutes – The Healthy Maven

Want a quick and easy dinner recipe that takes less than 20 minutes? Make this 20 Minute Chicken Teriyaki Recipe with Steamed Broccoli and Brown Rice for a healthy meal or weekday dinner.

I remember hearing a “would you rather” question which was an easy answer for me… would you rather use 3 times a normal amount of sauce or not use any sauce at all? I would choose 3x the normal amount of sauce all time!

I am a sauce lover from start to finish. A meal is not a meal without sauce! You might have the most delicious ingredients for a salad or bowl recipe, but without the sauce it will taste bland. When you say you love teriyaki, piri piri, curry, or even the beloved Buddha Bowl, what you are really saying is you love the sauce. So let’s give credit where credit is due… the sauce!

This 20-minute teriyaki chicken recipe comes with little effort thanks to the pre-made teriyaki sauce. A perfect and easy meal for those nights when you don’t have a lot of energy but still want a home cooked meal.

Here is what you need:

  • boneless, skinless chicken breast
  • tapioca flour – cornstarch also works.
  • olive oil – avocado oil would also work!
  • yellow onion
  • broccoli – you can buy a head of broccoli and cut it into florets or use pre-prepared broccoli florets.
  • teriyaki sauce – any brand works! I just found the Primal Kitchen brand which has great ingredients and is gluten, dairy and soy free if you have any dietary restrictions!
  • optional rice for serving

The best teriyaki sauces

  • Make your own! This recipe from Fit Foodie Finds sounds so simple and delicious.
  • Primitive cuisine – made with excellent ingredients and without many common allergens and intolerances.
  • Whole Foods Organic Soy Sauce – a great organic option that you can get from Whole Foods
  • Trader Joe’s Soyaki – an affordable option for TJ aficionados
  • Soy Vay – Kosher and vegan with a great classic flavor.
  • KIKKOMAN – less sodium teriyaki sauce which is also gluten free.

How to make teriyaki chicken

STEP 1: Add the chicken to a ziplock bag (or large bowl) and top with tapioca flour. Seal the bag and shake until the chicken is well coated. If using a bowl, stir until the chicken is well coated.

2ND STEP: Add olive oil to a large skillet and heat over medium-high heat. Add the chicken and cook, 3 to 5 minutes per side, until cooked through. The chicken should brown lightly, but does not need to be fully cooked.

STEP 3: Add more olive oil to the pan if necessary and stir in the onions. Cook 3 minutes or until slightly softened. Add the broccoli and 1 tablespoon of water to the pot, cover and steam the broccoli for 2 minutes.

STEP 4: Return the chicken to the pan with the broccoli and onions and garnish with the teriyaki sauce. Bring to a boil then reduce the heat to a boil for 3 minutes or until the chicken is cooked through. Serve immediately over rice or a base of choice.

This recipe would also be delicious with tofu! Start by buying extra firm tofu. Remove excess moisture in the tofu by wrapping the blocks in paper towels or a clean tea towel and stacking a few heavy pots or cookbooks on top.

Once the excess moisture is removed, cut the tofu blocks into bite-sized cubes. Add in a ziplock bag with the tapioca flour to coat the tofu pieces. Follow the rest of the recipe instructions and enjoy!
