Baked Chicken Skewers [In The Oven]

No grill? No problem. Prepare these baked chicken skewers in your oven without skimping on flavor! Thread them with fresh veggies and top with a lemon yogurt sauce for a delicious weeknight meal or weekend specialty.

For most of the past 8 years I have run this blog, I have not owned a grill. When we lived in Toronto, we had access to the gates on the roof of our building, but they were almost always broken. In San Francisco we didn’t have the space and during the brief 10 months we were in Marin I was able to buy a used grill from a neighbor that we made great use of. Otherwise, grilling just hasn’t been an option.

Now that we’re here and settled in Minnesota, we’re planning on buying a grill (eventually), but if you haven’t heard it, it’s basically winter 6 months of the year here, so we won’t. so let’s not rush to get one. Once the temperatures rise and we can actually enjoy the cooking process, we’ll be more motivated to find one (unless you want to sell me your old one!) But for now, we’re just sticking with our oven. and our grill pan.

And to be fair, the oven and drip pan work great! Even for burgers and kebabs which are more traditionally prepared on the grill, I could go so far as to say I prefer them in the oven or on the stovetop… GASP. I also don’t have to put on shoes and walk outside to check them every few minutes.

So if you live the grill-less life too, I promise you will still love those baked chicken skewers and won’t be rushing to buy a grill anytime soon.

What do you need:

For the chicken:

  • Chicken Breasts – 1 lb boneless, skinless chicken breasts
  • Olive oil
  • Spices – garlic powder, smoked paprika, cumin + sea salt
  • Vegetables – pepper, mushrooms, red onion + parsley
  • Bamboo or metal skewers

Tangy yogurt sauce:

  • Whole Greek yogurt
  • Olive oil
  • Lemon – juice + zest
  • Spices – cumin + sea salt

How to make chicken skewers in the oven

STEP 1: Add the chicken pieces to a large bowl and coat them with olive oil (about 1 to 2 Tbsp). Sprinkle with spices and sea salt. Marinate in the refrigerator for 1 to 2 hours or overnight (even better!).

2ND STEP: Prepare the tangy yogurt sauce by mixing all the ingredients listed. Put aside.

STEP 3: Preheat oven to 400 degrees F. Thread chicken and vegetables onto bamboo or metal skewers – alternating between vegetables and chicken. Place a baking sheet lined with skewers and drizzle with olive oil and sprinkle with sea salt making sure all the vegetables are well coated.

STEP 4: Bake for 15 minutes at 400 degrees F. Increase temperature to broil and broil for 3 to 5 minutes – watching carefully to make sure they don’t burn.

STEP 5: Remove from oven and sprinkle with fresh parsley. Serve with saffron rice and a tangy yogurt sauce.

Can you grill the kebabs?

Of course! If you’d rather grill those oven-baked chicken skewers, you absolutely can. All you need to do is preheat your grill to medium-high heat. Place your skewers directly on the grill and cook 8 to 10 minutes per side (16 to 20 minutes in total).

Under different vegetables

Are you not a fan of mushrooms? Do you prefer yellow onions to red onions? No problem! You can subtract all the vegetables according to your preference. You’ll want to aim for around 4 cups of mixed vegetables.. Here are some ideas:

  • Courgette
  • Pepper – any color
  • Red, yellow or white onion
  • Mushrooms
  • Eggplant

What to accompany with chicken skewers

My personal preference is to pair these oven-baked chicken skewers with saffron rice, but here are some other perfect pairings!
