Broccoli and cheddar fritters [Kid-approved!] – The Healthy Maven

Only a few simple ingredients are all you need to make these broccoli and cheddar donuts that are kid-approved and packed with nutrients… but shhh they don’t need to know!

I’ve always been one of those people who really loves vegetables. As a kid I couldn’t wait to eat steamed broccoli (still love it!) And as a mom I often had to make roasted asparagus. Don’t get me wrong, I was picky in other ways, but the veg was never a problem (apart from the frozen peas – YUCK!).

Despite my love of vegetables, I have always made it my mission to come up with creative and delicious recipes that give you the benefits of vegetables without the obvious fact that you are eating vegetables. I have hidden a lot of veggies in the desserts and I’m of the “if you can get away with adding them – add them!” Attitude. Don’t even ask C how many times I’ve packed kale in various meals.

These broccoli and cheddar donuts are one of those recipes. C’s first reaction was: “the kids will love this!”. And he’s right. You do not believe me? Test them out on your kids and let me know what they think in the comments below!

What you need for the broccoli and cheddar donuts:

  • Broccoli – about 4 cups of florets
  • Grated cheddar cheese – we love sharp cheddar!
  • Almond dish – plain flour or gluten-free flour will also work
  • Eggs
  • Clove garlic
  • Spices – paprika, salt + pepper
  • Olive oil – or a more neutral oil such as grape seed oil for cooking

How to make broccoli and cheddar donuts

STEP 1: Cook the broccoli – see stove and microwave instructions below.

2ND STEP: Finely chop the broccoli so that it has a coarse-grained consistency.

STEP 3: In a large bowl, combine the chopped broccoli with all the other ingredients (except the oil). Stir to combine.

STEP 4: Add 1 tablespoon of oil to a large skillet or skillet over medium-high heat. Pour about 1/4 cup of the batter into the pain and flatten with the back of the spoon. Cook 2-3 minutes on each side. Repeat until the dough is completely used. Do not overload the pan. Cook in batches, adding oil in between if necessary. Enjoy!

  • 1/2 cup grated cheddar
  • 1/4 cup almond flour (or regular flour)
  • 2 large eggs, cracked and whipped
  • 1 garlic clove, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • pinch of pepper
  • olive oil for cooking

Cook the broccoli [on stove-top]:

  1. bring a large pot of water to a boil.
  2. Add the broccoli florets and cook for 2 minutes.
  3. Drain the broccoli from the water and let cool until it can be handled.
  4. Chop the florets into small pieces, almost like a coarse-grained consistency.

Cook the broccoli [in microwave]:

  1. Add the broccoli florets to a microwave-safe bowl and garnish with 1 Tbsp. Tablespoons of water.
  2. Cook in the microwave for 2 minutes. May take 1 minute longer depending on microwave, but test to see if it cooks in 2 minutes.
  3. Remove from microwave and let cool for a few minutes or until it can be handled.
  4. Chop the florets into small pieces, almost like a coarse-grained consistency.

For the donuts:

  1. In a large bowl, combine the chopped broccoli with all the other ingredients (except the oil). Stir to combine.
